Production process: The Cabernet Franc was planted in 2012 in the vineyard next to the winery, an area that consistently produces exceptional wines every year. The plot is very close to our hearts and receives careful manual and dedicated care by the winemaker and the wine team only - from pruning to preparation for the harvest.
The grapes were hand harvested at first light and within a few minutes of picking were at the winery for sorting and processing, before cold soaking and a short fermentation in temperature-controlled stainless steel tanks. The process of extracting the color and flavors from the skins was carried out very gently in order to preserve the soft and refined nature of the wine.
At the end of fermentation, the wine was aged in French oak barrels for about 16 months (10% new).
Tasting notes: Our unique Cabernet Franc 2021 born from a great growing season, selective harvest and an exact vintage date. The wine presents a prominent fruitiness and varietal aromas that come to the fore at the very start. It's characteristics are peppery with greenish tones, restrained ripeness, light earthiness and minerality that are obtained without the masking or the influence of new wood. It's soft body and light weight help to match this wine to the dinner you have been waiting for a long time.
